| 霉变甘薯中毒 sweet potato poisoning 甘薯被霉菌污染并产生毒素,被人食用后引起的霉菌性食物中毒。主要发生在农村地区。甘薯在收获、运输和贮藏过程中擦伤摔伤的薯体部分,易于被霉菌污染,贮藏于温度和湿度较高的条件下,霉菌生长繁殖并产生毒素。引起中毒的毒素物质有甘薯宁、1-甘薯醇、4-甘薯醇。 霉变甘薯中毒的潜伏期较长,一般在食后 24小时发病。轻度中毒者有头痛、头晕、恶心、呕吐、腹泻等,严重中毒者恶心,多次呕吐、腹泻,并有发热、肌肉颤抖、心悸、呼吸困难、视物模糊、瞳孔扩大,甚至可有休克、昏迷、瘫痪乃至死亡。 霉变甘薯中毒没有特殊疗法。治疗原则是采取急救措施和对症治疗。急救措施是催吐、洗胃、导泻,以减少毒素的吸收。对症治疗主要是补液,纠正胃肠炎症状和神经系统症状。 预防措施主要是防止甘薯被霉菌污染,在收获、运输和贮存过程中防止薯体受伤,在贮存过程中要保持较低的温度和湿度。要会识别并且不食用霉变甘薯,霉变甘薯的表面有圆形或不规则的黑褐色斑块 ,薯肉变硬 ,具有苦味、药味。霉变甘薯不论生吃、熟食或做成薯干食用均可造成中毒。只有轻微霉变的甘薯可去掉霉变部分的薯皮薯肉,浸泡煮熟后少量食用。 |
