八卦宴
是南宋理学家朱熹创制并用来待客的一种礼仪。八卦宴最大的特色是各种菜肴的排列，排列方法是：先在八仙桌上画上八卦图，正中为太极、其八方分别为乾、坤、震、巽、艮、坎、离、兑八种卦覆、各陈列上一道有关卦理意义、富有武夷山风味的佳肴，整个宴席犹如一幅八卦图，可谓匠心独具。在菜肴名上，更是寓意悠远。太极之首为翡翠羹；易生两仪，分别置上玄天混丸和太乙阴阳蛋；两仪生四象，分别为百发圆子、莲塘君子，桂花虾仁，油焖双冬。这四道菜还暗寓了春夏秋冬四季之象。按八卦方位，每方位上的菜肴又分别为素炒鳝鱼丝，香油凤腿、酒酿冬菇，宫保鸡丁、竹笋肉丝、溜鸡肝卷、白炒木耳、八宝吉祥。朱熹创制的八卦宴800多年来，一直流传于武夷山民间，经整理后为中国饮食文化又增添了一朵奇葩。
