性质:最适生长温度低于15℃的微生物。主要分布于南北极地区、冰窖、高山、深海和土壤等长期处于低温的环境。细菌中如某些芽孢杆菌属(Bacillus)、梭菌属(Clostridium)、假单胞菌属(Psudomonas)和弧菌属(Vibrio)等;真菌中如斯氏假丝酵母(Candida scotii);藻类中如雪生腺衣藻等。嗜冷菌会使低温保藏食品变质。
