又叫“跟头蒜苗”。将蒜苗裁去蒜叶部分，先用立刀解入蒜苗1/2处，再用平刀向前伸进7毫米长处，用立刀切断。用同样的办法，两次套切成两头尖、中间连，像两个道士帽对着一样，故称“道士帽蒜苗”。因站立不住，老打跟头，也有称“跟头蒜苗”的。
