安徽的一道特色小吃，万安“杜”字虾米豆腐干，颇负盛名。
杜家豆腐店的虾米豆腐干，以用料独特，制作精细，配方讲究，色香味俱佳而著称。
制作方法：一是选用一年内粒粒饱满的新黄豆为主要原料，筛去杂质；二是选用优质小虾米，除杂质后用水炖开，逐块包进；三是用大茴、小茴、桂皮、花椒等佐料拌入黄豆内同磨；四是选用未加糖色的“三伏秋油”（酱油），加添适量虾米汁、冰糖、茴香、桂皮等佐料，同入卤锅。
制成的虾米豆腐干，颜色淡褐，光洁细腻，香味浓郁，鲜美可口，有韧性，折叠不开裂，压榨紧结，刀劈不散碎。可切成细丝或薄片，撕开可见细密纹理，内有虾米一只。既可佐酒下茶，又可作菜肴的配料，当作零吃小食也别有风味。
