【菜名】 火腿土司

【特点】 三层叠夹,火腿酱红,虾泥玉白,面包金黄,层次分明,香脆松嫩。
【原料】
主料:土司1/4只、熟火腿45克、虾仁100克。 辅料:鸡蛋一只(重约50克)、面粉10克、香菜15克:绍酒50克、味精15克、甜面酱50克、熟猪油750克(实耗油125克。)
【制作过程】
虾仁剁成泥,盛入碗中,鸡蛋磕开,将蛋清放在虾仁泥中,加绍酒、味精拌匀,蛋黄盛在另一碗里待用。把土司切成3片、虾泥分成3堆,分放在土司片上,塌平。火腿切成与土司等长的薄片9片,每片土司虾泥上放火腿3片揿平,使火腿与虾泥粘牢。把蛋黄打散,放入面粉,加水适量,搅拌成稀蛋糊,涂在火腿片上。锅置中火上,下猪油烧至三成热(约66℃)时,将土司片放入,炸至虾泥成熟时翻身,至金黄色时捞出,每片土司切成8小块装盘,盘的两端点缀上洁净的香菜,随带甜面酱蘸食。
