凉州凉粉
凉州因气候凉爽而得名，但凉上加凉，更是一绝。每当盛夏，来到凉州，吃一碗凉粉，真是凉飕飕、酸溜溜、辣酥酥，别具风味。
凉州凉粉品种繁多，风味各异，制作考究，佐料独特，既能“充饥”，也可“下菜”。花一两元钱，吃一碗凉粉，解渴去暑。一般常见的有豌豆制成的白凉粉，用荞麦制成的黑凉粉和用黑豆制成的黄凉粉，尤以白凉粉最讨人喜爱。它晶莹透明，隔粉能看见指纹。吃时可切成薄片、细条，或一寸见方的大丁，有的还用旋子旋成面条状；调料有酱油、醋、蒜泥、芝麻酱、油泼辣子、芥末等，有些人还喜欢抖点味精和花椒面，拌进一些香菜或嫩芹菜，吃来格外有味道。凉粉看起来诱人，吃起来咸、酸、香、辣、鲜五味俱全。
