凉州因气候凉爽而得名,但凉上加凉,更是一绝。每当盛夏,来到凉州,吃一碗凉粉,真是凉飕飕、酸溜溜、辣酥酥,别具风味。
凉州凉粉品种繁多,风味各异,制作考究,佐料独特,既能“充饥”,也可“下菜”。花一两元钱,吃一碗凉粉,解渴去暑。一般常见的有豌豆制成的白凉粉,用荞麦制成的黑凉粉和用黑豆制成的黄凉粉,尤以白凉粉最讨人喜爱。它晶莹透明,隔粉能看见指纹。吃时可切成薄片、细条,或一寸见方的大丁,有的还用旋子旋成面条状;调料有酱油、醋、蒜泥、芝麻酱、油泼辣子、芥末等,有些人还喜欢抖点味精和花椒面,拌进一些香菜或嫩芹菜,吃来格外有味道。凉粉看起来诱人,吃起来咸、酸、香、辣、鲜五味俱全。
