美味牛肝菌(cep) 常见于松属和栎属林地上的一种大型食用菌,其基部地下菌丝体与树木共生形成菌根。属牛菌科(Boletaceae)牛肝菌属。学名Boletus edulis Bull.ex Fr., 别名白牛肝、大脚菇等。子实体单生或群生,多生于云南松(Pinus Yunnanensis)、华山松(Pinus armandii)、高山松(Pinus densata)、麻栎(Quercus acutissima)和栓皮栎(Quercus variabilis)等朝阳山坡林下,土壤为贫瘠的酸性砂壤。每年八、九月份,气温20℃以上,空气相对湿度80%左右时为盛产期。每100g干品含粗蛋白质30g、脂肪1g、碳水化合物60g和多种氨基酸。美味牛肝菌是著名的野生食用菌之一。在国际市场特别是欧洲很受欢迎。美味牛肝菌分布于亚洲、欧洲、美洲等地。中国以云南、黑龙江、台湾、四川、贵州、西藏等地出产较多。 美味牛肝菌初期球状或半球状,菌盖表面平滑、不粘,盖宽8-15cm,灰白色、淡褐色、黄褐色至栗褐色;菌肉厚,白色无特殊气味,味道平淡,受伤时不变色;柄近圆柱形,高3-23cm,直3-7cm,基部膨大,色较盖浅,外表具凸出的网纹;菌管白色至淡黄色,近柄处凹陷,管口小,每毫米2-3个;孢子淡黄色,近透明,长椭圆形,11-16 ×4-5μ,内含1-3个油滴。 |
