[原料] 水发鸭掌350克，红椒5克。
[调料] 盐、糖、味精各1克，葱油3克，黄芥末酱7克，日本青芥末酱2克，卡夫酱20克，美极鲜2克。
[操作程序]
1、将每只鸭掌切成两爿，入沸水锅烫一下捞出。红椒也烫一下，切成末。
2、把黄芥末、青芥末、卡夫酱、美极鲜、盐、糖、味精放碗里调匀后，放入鸭掌拌匀，滴入葱油，略拌一下即可装盘，最后上面撒些红椒末。
[特色点评] 橙黄亮丽，辛辣香鲜。黄芥末是西方调料，色黄细腻，口味乎和，与辛辣的日本青芥末以及卡夫酱调制在一起，因起到了互补的作用，故成了餐桌上的新秀。 ．
[要领提示] 鸭掌涨发的质量要好，口味调制要适口。
