平遥碗托
平遥的碗托由清光绪年间城南堡厨师董宣首创，距今已有１００多年的历史。光绪二十六年（１９００年），慈禧太后西逃西安途经平遥时，品尝这种食品后，赞不绝口。当场赐予重赏。于是，碗托名声大振，成为一种地方名吃。
平遥碗托的制作方法是将白面用温水调成糊状，再加以一定比例的盐水、大料水和菜子油，由稠调稀后盛入五寸小碟内上笼蒸１５分钟左右，蒸熟凉切后即成。
平遥的碗托有冷调、热炒两种食用方法。冷调是切成面条状放入人后加醋、蒜泥、芝麻、大料水、辣椒末、香油等即可。食用时有一种凉爽、清香、光滑可口的感受。热炒是将炒瓢内入入熟猪油，加入葱蒜后，将切成条状的碗倒入，加山药蛋丝或豆芽菜，再加大料水、酱油、醋等调味品。炒熟后香味四溢，诱人馋涎欲滴。
