【原料】

狗脯方肉500克,鸡蛋1个,炖酱500克,水淀粉50克,精盐10克,花生油750克(实耗50克),芝麻盐25克,花椒5克,桂皮5克,大料5克。

【制作过程】

1、狗脯方肉洗净,放入清水中,浸泡一天后,捞出,控干,放入煮锅内,加清水、花椒、大料、桂皮大火烧开,去浮沫,煮半熟后,捞出,洗净。 2、炖酱用清水调稀,倒入过滤煮肉汤,再放入狗脯方肉,炖烧至酥烂时,捞出,控干,待冷却后,切成长10厘米,宽2厘米的斜刀片。 3、鸡蛋、水淀粉、精盐放入碗内,调成面糊,将肉片沾上面糊。 4、炸锅放入工花生油,烧至八成热时,投入沾糊狗肉片,炸至表面呈牙黄色时,捞出,控油,用刀斩成手指块后,装盆上桌,附带小碟芝麻盐那可。
