鲶鱼,又名鲇鱼,肉质肥厚,香味浓郁,蛋白质含量丰富,

无论是切厚片煎焖还是调一点豆豉酱油清蒸,都非常好吃。

鲶鱼还有一个非常好的特点,就是只有在脊椎上有十字骨,而没有其他的小骨刺。

主料:新鲜的鲶鱼

做法:

1、鲶鱼双面抹少量盐,腌两个小时

2、开火,在干锅上用姜片来回擦拭,然后放油

3、把鲶鱼放入,慢火煎

4、一面煎熟后,关火,等锅完全冷却后再给鱼翻身

5、完全煎好后,用适量生抽、糖和淀粉水勾薄芡,淋在鲶鱼上面

提示:由于鲶鱼用盐腌过,而勾的芡则是微甜的,所以吃起来味道非常有层次感。

另外就是由于鲶鱼肉质特点,煎过以后口感特别好,味道特别香。
