蒜香基围虾
基围虾为海虾,近年来多为养殖虾,吃法除白灼、椒盐做法之外,也有时以蒜茸、豉汁蒸制作,蒜香做法为独特口味,以炒的蒜茸、姜末、辣椒为调味,使人的食味产生了新的感觉。
用料:基围虾400克,大蒜50克。
做法:
①将虾洗净去虾线,剪须足,洗净,入调味,腌10分钟。
②略蘸干淀粉,油锅上火,把腌好的虾过油炸至上色,控去油。
③炒锅上火、炝锅、炒蒜、鲜辣椒末出香气,下入炸好的虾。
④烹入料酒、葱、姜末、盐、味精调料,迅速翻炒,即刻出勺。香气咄人,色泽耀眼。
华丽型菜肴。
