补充资料:荔枝虾虾
主料
荔枝10两(约400克),中虾12两(约480克),青椒、红椒各2只,姜1片,蒜头2粒,油1汤匙。
配料
腌料:盐、糖各1/4茶匙,蛋白1/2只,生粉3/4茶匙,胡椒粉少许,油1汤匙。
芡汁料:洋醋1汤匙,水3汤匙,盐、生粉各1/2茶匙,糖3/2汤匙,麻油数滴。
做法
1、荔枝洗净,去壳除核。
2、青椒、红椒均洗净,去籽切角块;姜切米粒大小;蒜头去衣剁成蓉。
3、虾去壳除肠,切成双飞状,用盐洗净,以清水冲20分钟,抹干水分,加入腌料拌匀,腌10分钟,泡嫩油。
4、烧热油1汤匙,爆香姜粒、蒜蓉,放入青椒、红椒,虾回镬,加入荔枝,拌匀芡汁料埋芡便成。
备注
荔枝洗净抹干才剥壳除核,可避免其壳不洁而弄污果肉。用作芡料的洋醋在超级市场有售,如用米醋,分量加倍。
