制作方法
1.分类:取竹叶青品种生香瓜,先按大小分三类:大香瓜留作包瓜料;小香瓜留作香瓜料;中个的香瓜留作黑菜料。
2.包瓜料与香瓜料腌制:每100千克瓜料下盐8千克,掸水5千克,瓜料入缸3小时后必须倒缸1次,每天倒缸2次,倒缸时要扬汤散热,促使盐粒溶化,瓜料入缸48小时后出缸放签子,包瓜料在瓜茎处用竹签子扎一个眼,香瓜料扎3~4个眼,瓜料放过签子,将瓜眼朝下,分别放在筐内压汤3~4小时,把瓜内的苦汤压净。瓜料压净汤后再分别入缸,每100千克瓜料下盐25千克,入缸当日必须倒缸1次,以免腐烂变质。每天倒2次,4天后每隔2天倒1次,腌20天后即可封缸贮存。成品色绿,不破不烂。
3.黑菜料的腌制:将黑菜料对半切开去籽,按每100千克放卤盐3千克,一层瓜一层盐入缸。入缸当日倒缸1次,倒缸时扬汤散热,促使盐粒溶化。卤瓜一夜,第二天早晨倒缸1次后出缸,倒在席上瓜皮朝下,瓜瓤向阳晾晒6~7小时后,再以每100千克瓜片下盐25千克分层入缸,每天倒缸2次,倒5~6天后改为每隔2天倒缸1次,腌制20天即可封缸贮存。成品色绿、脆嫩、不烂。
