主料
鲜鱿2个（600克），糯米100克，烧肉50克，香菇10克，鲜虾50克，虾米25克，莲子15克，花生油1000克，生柑1个，味精、胡椒粉、葱、酱油、鱼露、白肉各少许。
做法
1、将鲜鱿头拉出（不要切开），内腹冲洗干净，并将外膜脱洗干净待用。
2、先将糯米炊熟，然后和烧肉（切碎），香菇粒、鲜虾粒、莲子、虾米放进炒锅炉，调入味精、胡椒粉、葱、酱油、鱼露等制成八宝饭。
3、将八宝饭料塞进鱿鱼筒里面，放入蒸笼蒸熟，取出后用猛火旺油炸至金黄色即可，盛入餐盘，切成若干段，砌成鱿鱼形状，淋上胡椒油，餐盘四周用柑片点缀。
特点
此菜保持鲜鱿原状，鲜美味浓。
