原料: 原 料:
鲜草菇250克,鲜豌豆150克,麻油50克,精盐,味精,素鲜汤,湿淀粉,生姜汁各适量。
制法: (1)菇去蒂洗净,入沸水锅中略焯后捞出,放入冷水中过凉,切成丁。豌豆洗净,沥干水。(2)炒锅上旺火,放麻油烧热,下草菇丁,烹入生姜汁煸炒片刻,倒入豌豆,素鲜汤烧沸,加精盐,味精,用湿淀粉勾稀芡,淋入麻油炒匀,出锅装盘即成。
特点: 鲜嫩味美,补虚清火。
