姜汁撞奶首创于番禺县沙湾镇,沙湾是鱼米之乡,养水牛产奶是当地农民副业。这里产的水牛奶浓度高,含脂肪多,可以制成多种奶制品小吃,其中姜汁撞奶最为有名,传遍广州、香港、澳门食肆。按中医论说,牛奶性甘味寒,功能补虚羸,而姜则性辛微温,功能散寒暖胃,去痰下气。因此,姜汁撞奶在寒冷天气食之,顿有通身暖和之感,可谓配合巧妙。南信牛奶甜品专家自80年代后重新挖潜加以研制,使之具有姜香奶清的特点,又有驱寒健胃镇咳之效,不少日本、美国客人都慕名专程品尝,一些老主顾还经常买外卖回家吃,其风味道颇受消费者青睐。
