Method of fermenting production of polysaccharide hydrolase (PSH) for tea manufacture and the efficiency of tea manufacture were investigated from from the angle of solid fermentation and antipolyphenolity according to the principle of microbial physiology and ecology.
应用微生物生理生态学原理 ,从固体发酵及抗酚性方面探讨了适于制茶用的多糖水解酶的发酵生产方法及酶法制茶效果 ,结果表明 :在稻草培养基中添加 3 0 %左右的茶梗粉 ,固体发酵所得粗酶液不仅纤维素酶和果胶酶活性高 ,且抗酚性较强 ,用于加工红碎茶增质效果明

Results and conclusion Five phenolic compounds were obtained and identified as:threo-1-(4-hydroxy-3-methoxyphenyl)-1,2,3-propanetriol(1),erythro-1-(4-hydroxy-3,5-dimethoxyphenyl)-1,2,3-propanetriol(2),4-hydroxy-2-methoxyphenyl-β-D-gluc.
结果与结论分离得到5个酚性成分,结构分别鉴定为:苏式-1-(4-羟基-3-甲氧基苯基)-1,2,3-丙三醇(1)、赤式-1-(4-羟基-3,5-二甲氧基苯基)-1,2,3-丙三醇(2)、4-羟基-2-甲氧基苯基-β-D-葡萄糖苷(3)、4-羟基-2,6-二甲氧基苯基-β-D-葡萄糖苷(4)、2-(4-羟基苯基)-乙基-(6-O-咖啡酰基)-β-D-葡萄糖苷(5)。
