清蒸荷包红鲤鱼
主料与辅料——活荷包红鲤鱼2条，水发香菇25克，精盐5克，料酒20克，熟猪油25克，姜块10克，葱白15克。
制作技艺——
1．红鲤鱼去鳞、腮，破腹去内脏，洗净沥干水，在鱼身两边剞斜形花刀，盛入钵内撒精盐、料酒抹匀鱼身腌渍片刻。
2．将腌过的鱼放入盘中，香菇摆在鱼身上，舀入熟猪油，放葱白、姜块(拍松)，上笼用旺火蒸15分钟，至鱼眼突出时即可熟，取出拣去葱白、姜块即可。
