补充资料:芥末炒鲜鱿
主料: 鲜鱿450克,西芹150克,日本青芥末3茶匙,蒜蓉1茶匙,甘笋花数片。
配料: 腌料:姜汁、绍酒各1茶匙,盐1/4茶匙,生粉1茶匙,胡椒粉少许。调味料:水1汤匙,盐1/3茶匙,柠檬汁1茶匙,糖2/3茶匙,生粉1/6茶匙,胡椒粉少许。
做法: 1、西芹撕去筋后,洗净,斜切块,泡油,沥干油分,留用。
2、鲜鱿撕去外衣,洗净,抹干,剁花切件,放入腌料腌匀,泡油至九成熟,待用。
3、烧热油2汤匙,爆香蒜蓉,将鲜鱿回锅,浇酒,注入调味料、青芥末、甘笋花兜炒匀至熟,即可盛上碟热食。
备注: 鲜鱿要撕去外衣,剁花才会卷曲,腌后泡油至九成熟,再回锅。西芹可泡油或用油盐水略飞水待用。
