锅仔鱼头炖豆腐
做法
1 鱼头去腮，刮鳞， 洗净， 切半；
2 锅内烧热油， 将鱼头两面煎一下；
3 倒入开水，移入沙锅内， 放姜片， 胡椒粉， 盐， 中小火炖至汤色乳白；
4 下豆腐， 加葱丝， 即成。
特点
基本不用过多调味， 尽量发挥利用鱼头本身的鲜味。
注意
最好有电炉， 边煮边吃， 还可以下粉丝， 豆苗等。
这里豆腐是嫩豆腐， 其实炖豆腐应该用中火的, 嫩豆腐容易炖散，
但是最后到是有豆花的效果， 豆腐不怕炖， 越炖越嫩， 越入味。
