羊肚菌(morel) 一种菌盖状似羊肚的大型子囊菌,属马鞍菌科(Helvellaceae)羊肚菌属。学名Morchella esculenta (L.)Pers.,古称羊肚菜,别名羊肚子。子实体单生或群生,大多生长在林下有蔷薇科小灌木,地面有腐殖质层覆盖;灰色沙壤,中性或略偏碱性,含水量40%%左右的阴湿环境阔叶林地上。子实体发生多见于春夏之交,最适温度14-18℃,昼夜温差为10-15℃。羊肚菌菌丝体中含有丰富的赖氨酸,异亮氨酸、苯基丙氨酸等。工业发酵生产的菌丝体可作调味食品和蛋白质、维生素的补充来源。每100g干品含粗蛋白22.8g、脂肪4.3g,总碳水化合物62.9g,纤维素8.4g。 羊肚菌属分布于欧洲、美洲、大洋洲、亚洲。中国主要产于云南、山西、青海、四川、河北、甘肃、新疆等地。羊肚菌子实体分化发育的生态因子还未完全探明,故至今尚不能进行人工栽培。 羊肚菌子囊果有明显的柄和菌盖,盖膨大呈圆球形,下端与柄相连,顶端钝圆,表面有明显的网状棱纹,长4-7cm,阔4-6cm,凹隐部分近圆形或多角形,成不规则蜂窝状,白色、褐色至古铜色;柄白色,中空,长5.5-7cm,幼时上部表面有颗粒状突起,后期平滑,基部膨大并有不规则的凹槽;子囊孢子8枚单列,无色,椭圆形,11-13 ×24-28μ;侧丝无色,顶端稍膨大。同属的小顶羊肚菌(M.angusticeps Peck)、小羊肚菌(M.delliciosa Fr.)和尖顶羊肚菌(M.conica Pers.)等均为食用菌。 |
