雏鸡觅食

原料:面粉500克,熟猪油160克。 调料:莲蓉馅250克。 制作方法:烤。将面粉、熟猪油按2:1的比例擦成干油酥;再将面粉、熟猪油、清水和匀揉成水油皮。干油酥与水油皮按3:7的比例用开小酥的方法开成暗酥坯子,包入炒好的莲蓉馅,捏成小鸡形状,用花钳夹出鸡翅,黑芝麻镶眼睛。入烤炉中用200℃--230℃的炉温烤熟。再用少许面粉加水揉成面团,搓成竹篾状的长条编成鸡笼形状,套在碗底入烤炉在烤至微黄,取出碗后即成“鸡笼”,将小鸡、鸡笼一同摆入铺有菜松的大盘子中,再摆上油炸馒头做成的“山丘”即成。 风味特色:形似小鸡,皮内酥层分明,馅心细腻香甜。 技术要领:小鸡要捏得神态各异,开暗酥,菜松用白菜的青叶子,切细炸干。
