原料:
肥瘦猪肉500克,植物油40克,猪油20克,水发黄花菜、木耳、菠菜各30克,鸡蛋1个,水淀粉20克,酱油15克,清汤80克,葱10克,姜5克,精盐2克,味精1克。
制法:
(1)将葱切段;姜切末;把猪肉剁成蓉,加入少许精盐、水淀粉和适量清水,再放入鸡蛋液、姜末、味精,搅拌均匀成肉馅,用手挤成丸子。
(2)将植物油倒入炒锅中,烧至六成热,将肉丸子入锅中,炸至色泽淡黄,捞出装碗,加入30克清汤和少许酱油,上屉蒸透,翻扣盘内。
(3)将猪油放入锅内烧化,加入50克清汤和少许酱油,放入发好的黄花菜、木耳、葱段、菠菜,烧开后勾芡,淋入猪油,浇在肉丸上即可。
特点:
肉丸鲜嫩,汤汁醇厚。
