Xinyang Maojian tea is a traditional famous tea in China Correlation on organoleptic qualitative factors is studied by mathemtical statistieal means.
信阳毛尖是我国传统名茶,本文采用数理统计的方法,对信阳毛尖茶感官品质因子间的相关性进行了研究,结果表明:信阳毛尖茶四项外形因子与外形总分,四项内质因子与内质总分均呈极显著正相关,除净度外其余七项品质因子与品质总分呈极显著正相关;外形品质因子间的相关性相对较小,内质品质因子间的相关性较高,达到极显著或显著水平,特别是香气和滋味的相关系数达到了0。

都匀毛尖茶
又名“都匀细毛尖”、“白毛尖”、“鱼钩茶”、“雀舌茶”。其茶牙尖细如条,色泽绿中带黄,白毫特多,茶水甘爽、清香。含多酚类化合物高于一般茶叶百分之十左右,氨基酸含量也较高。1915年在巴拿马国际赛会上获得优胜奖。1983年被评为全国十大名茶之一。
“都匀毛尖外形可以和碧螺春媲美,内质可以和信阳毛尖并论,鲜叶要求嫩绿匀齐,细小短薄,一芽一叶时初展,形似雀芽。外形条索紧细卷细,毫毛显露,色泽绿润;内质香气清嫩鲜,滋味鲜浓回甜,汤色清澈,叶底嫩绿匀齐。”
都匀素有“小江南”之称,其采摘嫩度、加工等都不会差于碧螺春,不同的是茶树品种和茶树所种植的地方不同。
