〔 制 法 〕
１ ． 将 糯 米 淘 净 ， 浸 泡 ， 蒸 熟 ；
２ ． 锅 置 旺 火 上 ， 将 大 米 浆 徐 徐 入 锅 ， 边 倒 边 搅 动 ， 搅 至
稠 浓 成 糊 ， 盛 出 ；
３ ． 将 黄 豆 带 水 磨 成 豆 浆 ， 再 加 入 石 膏 浆 汁 制 成 豆 腐 脑 ；
４ ． 碗 内 放 入 馓 子 及 熟 糯 米 ， 舀 入 半 勺 大 米 糊 ， 再 舀 入 豆
腐 脑 ２ ～ ３ 扁 瓢 ， 放 入 酱 油 、 榨 菜 、 酱 瓜 、 火 腿 、 虾 米 等 末 ，
