原料：
鲜活鲤鱼１尾（约５００克） 糯米３００克 姜片１５克 葱段４５克 大料粉１克 豆腐乳１块 精盐、玫瑰露酒、海鲜酱、蚝油、生抽、白糖、味精、化猪油各适量 铝箔纸１张
制法：
１鲤鱼宰杀后治净，在鱼身两面各剞数刀，用姜片、葱段、精盐、玫瑰露酒腌渍片刻，拣去姜葱不用；糯米淘洗净，再用清水泡涨。
２将泡涨的糯米用大料粉、豆腐乳、海鲜酱、蚝油、生抽、白糖、味精、化猪油等拌和均匀，即成糯米味料。
３将铝箔纸平铺于案板上，先在铝纸上铺一半糯米味料，再放上鲤鱼，然后将剩余的糯米味料盖在鱼身上，最后将铝箔纸包好，入笼用旺火蒸熟，取出即成。
特点：
色泽红亮，鱼肉细嫩，糯米香味浓。
