(1)盐 1/2大匙

制作：
(1)将嫩姜芽洗净去除外膜并沥乾，将调味料(1)均匀撒在嫩姜芽上，并以手轻轻按压搓揉使其软化，约10分钟後静置3～4小时。
(2)将黄金针鱼切成1公分段备用。
(3)将嫩姜芽的盐水沥乾并用冷开水洗净，再次彻底沥乾水份，加入调味料(2)及黄金针鱼，冷藏腌渍约3～4小时待其入味後即可食用，冷藏约可保存1週。
