徐州的蛙鱼,同陕西风味的“面鱼子”,不论是在制作上,还是食用上均有相似之处,因形似蝌蚪,故称“蛙鱼”。制作“蛙鱼”的原料,现在大多选用山芋淀粉,也有的用绿豆淀粉或豌豆淀粉,而陕西风味的“面鱼子”是用荞麦面调释,用漏勺漏在开水中氽熟,然后加入调料食用。徐州“蛙鱼”的制作是将淀粉用水稀释搅开,倒入烧开的沸水中,淀粉受热膨胀,糊化成淀粉糊,然后趁热倒入钻有洞眼的盆中,将盆支架在盛有冷开水的大盆上,这样淀粉糊就从洞眼流出来,落在冷开水中,冷却后形似蝌蚪。食时加酱油、味精、芝麻油、辣椒酱、蒜泥,再加入徐州特产萝榨菜,酸、咸、香、辣可口。夏天用冷水冰,冬天用热水焐。
