[操作程序]
1．草鸡从背部剪开，洗净，在开水中焯水后，放在砂锅中加水烧开，放入洋葱、姜块、黄酒、胡椒粉，用小火炖1.5小时。
2．菠萝去皮、芯切成片，放在清水中泡掉些甜味。苦瓜剖开后掏去瓜瓤，批成斜片，洗净。
3．拣去砂锅中的洋葱、姜块，放入菠萝、苦瓜、盐，再用小火烧半小时，最后加入味精即成。
[特色点评] 汤清味醇，口味别致，是夏令的佳品。
[要领提示] 鸡要炖酥，苦瓜和菠萝的比例要适量，否则将影响口味。
