The contents of ATP-related compounds in Pseudosciaena crocea meat were analyed by HPLC,and the freshness of Pseudosciaena crocea meat during iced storage were assessed using freshness quality index(K value), total volatile base nitrogen(T-VBN) level and sensory scores.

| 大黄鱼 Pseudosciaena crocea；large yellow croaker 鲈形目石首鱼科黄鱼属的一种。又称大鲜，大仲，黄瓜鱼，大黄花。体长椭圆形，侧扁。尾柄细长，其长为其高的3倍多；头大而侧扁，背侧中央枕骨嵴不明显；颏部有4个不明显小孔；背鳍和臀鳍的鳍条基部2／3以上被小圆鳞；背鳍起点在胸鳍起点上方；鳔侧管2 小分支，平行且相等。为结群性近海鱼类，分布范围由南海雷州半岛以东至黄海南部西侧（朝鲜西岸附近偶有出现）。栖息于水深10～60米的水域。中国产的大黄鱼有 2 个地方种群，在东海浙江北部的为岱衢族，在南海广东西部的为硇洲族。在同一海区的鱼群有春季生殖的春宗和秋季生殖的秋宗。为中国最重要的经济海鱼之一，由于滥捕，产量已大减。 |
