雪菜大黄鱼,又称大汤黄鱼,是富有宁波地方特色的名菜。
雪菜大黄鱼,选料和制作都十分讲究。选取新鲜大黄鱼,洗净后在背部两面肉厚处用刀略划几个口子,用本地种植的雪里蕻腌制的咸菜切成末,冬笋切成薄片,备用。然后,将大黄鱼用油煎至两面稍黄,烹入黄酒,加盖焖片刻后,加水、加姜、放入雪菜,笋片以及食盐、味精,用猛火烧沸后,再用小火烧数分钟,待汤汁呈乳白色时,撒些葱末,即可装碗,把汤汁倒入碗内即可。
大黄鱼肉嫩味鲜少骨,自古有“琐碎金鳞软玉膏”之誉。雪里蕻咸菜,质地脆嫩,鲜美可口,有一种特殊的鲜香味。以这两种为主料烧制的雪菜大黄鱼,具有鱼肉嫩,菜香。
