To study the effects of chitosan on carcass characteristics and meat quality in goose, 120 geese of twenty eight days old were randomly allocated into 4 groups for 5 replicates of 6 birds each.
15%的壳聚糖可明显降低屠体脂肪含量,但对其它屠宰性能没有明显影响;鹅肉的pH和嫩度、干物质、氨基酸及总还原糖没有明显变化,但蛋白含量有所增加,脂肪含量有所下降,肌苷酸明显增加,从而改善鹅肉的风味。
