鸽蛋12个水发香菇、水发玉兰片、水发鱼肚各50克,豆苗叶25克,熟火腿末2.5克,料酒10克,精盐1.5克,湿玉米粉10克,清汤250克,鸡油10克。
【制作过程】
1.将水发香菇、水发玉兰片洗净,同火腿一起均切成细丝,即成为“三丝”。 2.锅中注入清水,上火烧开,放入三丝氽一遍捞出。另起锅,注入100克清汤加料酒、精盐各少许,放入三丝,在火上煨两分钟捞出,控净汤,撒在圆盘中。 3.取12个碗形小酒盅,盅内抹一层鸡油,将鸽蛋分别磕入小酒盅内(不要将蛋黄弄散)将豆苗洗净,放在鸽蛋上,再撒些火腿末上屉蒸5分钟左右取出,用小刀从边上划开,取出鸽蛋,整齐地码在盘中的三丝上。 4.锅中注入150克清汤,加入剩余的料酒、精盐,对好口味,用水将玉米粉调稀,倒入锅中勾成汁,淋上鸡油,浇在菜上即可。
