[操作程序]
1．银鳕鱼去皮、骨后切成条，上撒些盐和胡椒粉，加鸡蛋清拌匀，粘上生粉进热油中炸成淡黄色捞出。
2．竹荪、香菇泡开，焯水后切成片；蘑菇、西兰花、胡萝卜、火腿及水发蹄筋切成片。
3.鸡汤入锅，倒入所有的原料和调料，烧开后移入锅仔即可上席。
[特色点评]汤鲜味美，银鳕鱼油炸后烧汤，酥绵而富有特色，是一款新菜。
[要领提示] 银鳕鱼要炸至酥香。另需高汤作底汤。
