原料：
材料： 牛利（牛舌）1条，蒜头2瓣（切茸），番茄汁3/4杯，番芫为茸1汤匙，牛油2汤匙，盐、胡椒粉各少许。
香料：百里香、月桂树叶、西芹连叶、葱、胡椒粒各适量。
制法：
（1）牛利用清水浸约2小时，加香料，大火烧滚，改中火盖煮l.5～2小时。用竹签插入牛利中后取出，无血水粘附，证明已熟。
（2）取出（1） 之牛利，趁热剥去利苔层，候冷，切7毫米厚片。
（3）煮溶牛油，排入牛利略煎，然后薄撒盐、胡椒粉，取出。
（4）改中火加蒜茸炒至焦黄色，下番茄汁，以盐、胡椒粉调味，煮好，熄火，全部保温。
（5）牛利排碟上，浇入番茄汁供食。番芫萎装饰。
特点：色美，味鲜甜爽口
