用途:此种酶在中性条件下,催化分解蛋白质或高分子肽键,其产物为小分子的蛋白胨、小肽以及个别的氨基酸。广泛用于食品、酿造、制革及饲料添加剂等方面。
备注:用微生物生产的中性蛋白酶,大多数是金属酶,一分子蛋白酶中含一原子锌,分子量35000~40000,等电点8~9,是微生物蛋白酶中最不稳定的酶,易自溶,会造成分子量的明显减少。钙离子对维持酶分子的构象起重要作用,对酶的热稳定有明显保护作用。
