In order to investigate the situation of food intake, diet habit and dietary pattern in people living in different “cuisine” areas of China, and to search for the relations between diet and health status, a total of 538 subjects (269 couples) aged between 50-60 years in four rural areas were surveyed by a food frequency questionnaire method.
为了解不同“菜系”地区居民的饮食习惯、膳食模式及食物摄入量情况 ,用频率法 (覆盖时间为 1年 )对中国四大“菜系”(川菜、鲁菜、粤菜、淮扬菜 )地区 5 40名 (2 6 9对夫妇 ) 5 0～ 6 9岁农村居民的膳食进行了调查。

可耐受最高摄入量（ul，tolerable upper intake levels）：指某一生理阶段和性别人群，几乎对所有个体健康都无任何副作用和危险的平均每日营养素最高摄入量。目的是为了限制膳食和来自强化食物及膳食补充剂的某一营养素的总摄入量，以防止该营养素引起的不良作用。
