【原料】
材料: 河粉1000克,嫩牛肉片20克,金针菇10克,油菜4颗,洋葱丝少许,葱末少许高汤材料: 牛骨1根,牛腩肉20克,萝卜1根,洋葱1/3颗,姜1块,草果3颗,八角1大勺,盐1/3小勺调味料: 糖1/4小勺,鱼露1小勺
【制作过程】
1. 煮一锅水,将牛骨敲开后,后牛腩一起放入热水烫后,捞起后分别洗净备用. 2. 将高汤材料中的草果敲开,和八角一起装入小布待备用.萝卜去皮切块备用. 3. 准备一锅水,放入小布袋、牛腩,牛骨,用大火煮开后,捞出浮沫,转小火,再放入1/3颗洋葱、姜、萝卜块、盐一起熬煮1小时,将牛腩取出,再煮3小时,最后把高汤中的材料滤掉,只留下清汤,最后加入糖、鱼露调味。 4. 牛腩凉后切片备用。将河粉、油菜、金针菇分别烫熟,取一汤碗,将河粉放入,上面铺上牛腩片、油菜、嫩牛肉片、洋葱丝、金针菇,再将煮好的高汤倒入,最后撒上葱末即完成
