| 双糖 disaccharide 单糖分子中的半缩醛的羟基和另一个单糖分子的羟基共失一分子水而生成的化合物。失水的方式可能有两种：①一分子单糖的半缩醛的羟基和另一分子单糖的半缩醛的羟基失水，如蔗糖的两个单糖的羰基都成了缩醛(缩酮)，不能发生羰基的反应，称为非还原糖。②一分子单糖的半缩醛的羟基和另一分子单糖的醇羟基失水，仍然保留它的半缩醛(酮)的羟基，因此能发生醛(或酮)的反应，称为还原糖，如麦芽糖。两分子单糖以糖苷键相互连接成双糖的结构多种多样。常见的双糖有：蔗糖、麦芽糖、纤维二糖、异麦芽糖、龙胆二糖、海藻糖和乳糖等。其中以蔗糖、麦芽糖和乳糖最重要。 |
