性质:又称谷氨酸单钠。习称味精或味素。俗称麸酸钠。左旋谷氨酸的一钠盐。白色晶体或结晶性粉末。有光泽。谷氨酸一钠含量≥99%。透光率≥98%。比旋光度[α]D20+24.8°~+25.3°。溶于水和乙醇。有特殊鲜味。有蛋白质水解法、合成法和发酵法三种。第一种因要以蛋白质(面筋)为原料,第二种虽不用粮食(以碳化物、丙烯腈、丙烯酸和糖醛等为原料)作原料,但需要高温高压,设备要求高,所以采用的不多。目前多采用发酵法。发酵法以玉米淀粉、干山芋淀粉或大米淀粉为原料,经淀粉水解(酸法水解或酶法水解)、种子培养、发酵、提取、精制等工序制成。如加入显味核苷酸钠(5-乌苷酸二钠和5′-肌苷酸钠为主要组分)可制成强力(特鲜)味精,核苷酸钠加入量为1%~12%。其鲜味可成倍增长。
