蛋白质互补作用
complementary action of protein

同时或在数小时内摄入不同的食物蛋白质,使其氨基酸互相补充,接近人体必需氨基酸比值。如鸡蛋、大豆、玉米蛋白质生理价值分别为94、57和60。如以70%大豆与30%鸡蛋混合,则混合蛋白质的生理价值提高到77;以25%大豆与75%玉米混合,蛋白质生理价值提高到75。
