补充资料：肘子黄豆熬凉瓜汤
主料
凉瓜1斤（约600克），黄豆、咸菜各4两（约160克），火腿肘子12两（约480克），辣椒1只，北菇4朵，虾米随意。
做法
1、肘子洗净出水，黄豆洗净浸水1小时，用15碗水把肘子及黄豆熬汤，约3小时。
2、将凉瓜切段，与咸菜、北菇及辣椒、虾米放入汤中再熬30分钟即成。
备注
1、整只辣椒放入煲汤，有中和寒凉的作用，切碎再煲，则可增加一点辣味。
2、加入虾米同熬能令汤底味清带浓。
