【来源】
为鲤科动物草鱼的肉。
【动物形态】
草鱼(《纲目》) 体长，躯干略呈圆筒形，尾部侧扁，腹圆，无腹棱。体长可达90厘米以上。口端位，成弧形，无须。上颌略长于下颌。眼小，位于头两侧，眼径小于吻长。下咽齿2行，扁平，呈梳形，齿侧具横沟纹，鳞中等大小，侧线鳞39～46。背鳍Ⅲ7，起点与腹鳍相对。臀鳍Ⅲ8。背鳍及臀鳍均无硬刺。体呈茶黄色，腹部灰白色，胸、腹鳍略带灰黄，其它各鳍色较暗。 生活于江河、湖泊中，一般喜栖于水中下层和近岸多水草处。性较活泼。以草类为食。产卵期4～7月。冬季在湖泊较深处越冬。我国南北各平原地区的河流、湖泊均有分布。是我国养殖鱼类之一。 本动物的胆(鲩鱼胆)亦供药用，另详专条。

食部每100克含水分77克，蛋白质17.9克，脂肪4.3克，灰分1克；钙36毫克，磷173毫克，铁0.7毫克，硫胺素0.03毫克，核黄素0.17毫克，尼克酸2.2毫克。
