原料: 原 料:
鲜猴头菇250克,水发香菇125克,冬笋25克,青菜50克,鸡蛋8清1个,黄酒、素鲜汤、花椒水、干淀粉、熟麻油、味精、湿淀粉各适量。
制法: (1)猴头菇剪去根蒂,放在清水中漂洗干净,切成薄片,放沸水锅中略焯,捞出,挤干水。水发香菇一批为二。冬笋洗净,切成片。青菜洗净,切成3厘米的段。
(2)鸡蛋清放入碗内,加干淀粉、素鲜汤调成糊,放入猴头菇片逐一挂糊,入沸水锅中焯透,捞出,控去水,码在扣碗内,放入熟麻油、素鲜汤、加黄酒、精盐、花椒水,上笼蒸约20分钟取出,滗出汤汁,将扣碗扣在盘内,揭开碗。
(3)汤锅上旺火,倒入滗出的汤汁,下冬笋片、香菇片、青菜、烧沸,撇去浮沫,用湿淀粉勾芡,淋入麻油,炒匀出锅,浇在猴头菇片上即成。
特点: 清淡可口,养阴开胃。
