原料配方(制50只) 糯米2.5千克 黑芝麻250克 芝麻油150克 绵白糖500克 白芝麻125克
制作方法 1.把糯米淘洗干净,放在缸内用清水浸泡约8小时(夏季4小时,冬季可稍长些),
取出,再淘一下滤去水分,倒入蒸桶,加盖。置旺火沸水锅蒸至成熟,停火,焖约10分
钟再舀入冷开水500克,均匀洒于米上,加盖焖蒸5分钟取下。
2.取石舀一只,放凉开水100克(防粘),倒入熟饭边舂边翻,全部捣烂后,取出放案板
上(事先抹些芝麻油防粘),再倒入芝麻油(100克)抹在粉团面上,防止风干裂缝,冷却待用。
3.将黑、白芝麻分别淘净,用中火炒至香熟,冷却后分别碾成屑,放绵白糖(各250克)
拌和为馅。
4.手上抹些芝麻油,取一块熟粉团(约80克)捏窝,放置芝麻馅(15克)捏拢成团状,两面
再沾上白芝麻馅放盘中即成。
产品特点 绵软而劲韧,甜香盈口,为春末夏初清凉食品。
