性质:学名十八碳-9,11,13-三烯CH3(CH23(CH=CH)3·(CH27COOH 酸。亚麻酸的最重要异构体。白色晶体。分子中有三个共轭双键。有多种顺反异构体,其中α-桐(油)酸和β-桐(油)酸最为重要。α-桐(油)酸,熔点48~49℃。不溶于水,溶于乙醇和乙醚。在日光、空气等中不稳定。易受氧化。受日光、硫、硒、硫化物、硒化物等的作用而转变为β-桐(油)酸。其甘油酯是桐油的主要成分。β-桐(油)酸,熔点71℃。不溶于水,较难溶于乙醇和乙醚。较稳定。不易受氧化。能起加成反应。氢化时最后变为硬脂酸。α-桐(油)酸由桐油经水解后用乙醇分步结晶而得。β-桐(油)酸由将α-桐(油)酸转化而制得。
