补充资料：层层脆猪耳
⑴原料选择：猪耳原料必须经卫生检查合格，且不宜过大，否则成品外形不美观。
⑵原料整理：用刀刮去猪耳上的残毛，除去污秽，割去病灶部，清水冲淋。用饱和食盐溶液腌渍4小时。
⑶调制料汤：以10公斤猪耳计：香辛料为大茴香、桂皮、花椒各20克，丁香、陈皮各10克，用纱布包好；调味料为葱、姜各200克，洗净拍扁；着色剂为红曲色素50克。将上述调料放入锅内一起熬制，煮沸10分钟后，除去浮沫及污垢杂物。
⑷料汤煮制：先将腌制好的猪耳用水冲洗干净放于锅内，加水预煮沸后再用清水将猪耳冲洗干净。然后将猪耳放入料汤中，开始用大火煮30分钟后加入黄酒100克和糖60克，再用文火煮1小时，除去多余的料汤，放入味精5克，即收汤起锅。
⑸装盒消毒：用不锈钢或铝制模盒装盒。装盒前先在模盒内装好衬袋，这样可以避免拆盒包装时污染。装盒时一片片猪耳竖立起来排放，排得愈紧愈好，当模盒填塞好后加盖压紧即成。将装好猪耳的模盒放于锅内，再放入开水至淹没模盒为止，然后煮沸30分钟。亦可用蒸气消毒30分钟，冷却即成（冷却最终温度为2-4℃）。
