补充资料:层层脆猪耳
⑴原料选择:猪耳原料必须经卫生检查合格,且不宜过大,否则成品外形不美观。
⑵原料整理:用刀刮去猪耳上的残毛,除去污秽,割去病灶部,清水冲淋。用饱和食盐溶液腌渍4小时。
⑶调制料汤:以10公斤猪耳计:香辛料为大茴香、桂皮、花椒各20克,丁香、陈皮各10克,用纱布包好;调味料为葱、姜各200克,洗净拍扁;着色剂为红曲色素50克。将上述调料放入锅内一起熬制,煮沸10分钟后,除去浮沫及污垢杂物。
⑷料汤煮制:先将腌制好的猪耳用水冲洗干净放于锅内,加水预煮沸后再用清水将猪耳冲洗干净。然后将猪耳放入料汤中,开始用大火煮30分钟后加入黄酒100克和糖60克,再用文火煮1小时,除去多余的料汤,放入味精5克,即收汤起锅。
⑸装盒消毒:用不锈钢或铝制模盒装盒。装盒前先在模盒内装好衬袋,这样可以避免拆盒包装时污染。装盒时一片片猪耳竖立起来排放,排得愈紧愈好,当模盒填塞好后加盖压紧即成。将装好猪耳的模盒放于锅内,再放入开水至淹没模盒为止,然后煮沸30分钟。亦可用蒸气消毒30分钟,冷却即成(冷却最终温度为2-4℃)。
