一粒小麦(einkorn)

小麦属的二倍体种,包括野生一粒小麦Triticum boeoticum Boiss和栽培一粒小麦Triticum monococcum L.。染色体数2n=2x=14,染色体组型为AA。茎秆细,穗小而扁平,每小穗一般结实1粒。

栽培一粒小麦已知有18个变种。株高60-120cm,植株有粗硬茸毛,抗倒伏性较强。叶片有粗硬茸毛。穗长4-9cm,小穗具芒,结实一粒;有的类型为2芒2粒。护颖脊明显,成熟时内颖纵裂为两片。籽粒两侧扁平,带皮(稃),两端稍尖,难脱粒。多为春性。抗病性强,大多数类型能抗条锈病、叶锈病、秆锈病、黑穗病和白粉病。籽粒蛋白质含量一般为23-25%,有些类型可达28%左右。

野生一粒小麦已划分出90个变种,许多性状与栽培一粒小麦相似,不同的是大多数为冬性,春性很少;小穗基部有茸毛,易断穗。野生一粒小麦籽粒蛋白质含量可达高23-30%。
